This year my mom asked that I bring a dessert and "something different, maybe something local from Maine or Mass. How about cranberries?" well that is a different request, but what better excuse to try another canning recipe could I have gotten? So off to the cranberry bogs... There is one in Foxboro owned by Ocean Spray. Where's the fun if I just walk into Shaw's and buy Ocean Spray cranberries? Lucky for me while I was up in Maine Julz said that the Whole Food's has local cranberries on display. One quick trip to Whole Foods and I have local cranberries, organic honey, some "fancy" dried apricots, paired with some oranges, tart apples and orange juice from home and I have myself a recipe for some fun cranberry marmalade. I was able to can 2 pints each for both batches I did, one with all honey and one with honey and sugar. I think my biggest mistake was not cutting the oranges into smaller pieces but other then that I think they will be delicious.
